Nothing beats a fudgy, gooey, melt in the middle rich chocolate brownie, right? Wrong! We like to make our brownies a little more indulgent by adding our Original Peanut Butter for that extra YES factor. To make this scrumptious vegan treat just follow this simple recipe:
270g Vegan Dark Chocolate
210g Coconut Oil
280g Aquafaba (approx 2 tins)
270g Coconut Sugar
45g Cacao Powder
375g Gluten-free Flour
5g Baking Soda
90g Original Peanut Butter
Preheat the oven to 150 degrees Celcius.
Gently melt the coconut oil in a bain-marie or if your coconut oil is in a glass jar then place the jar in a bowl of warm water so that it melts.
Break your chocolate into pieces and place in a glass bowl. Find a saucepan that the glass bowl will balance inside. Place a small amount of water in the saucepan and put on a gentle medium heat and stir the chocolate until it completely melts. Add the coconut oil and stir until combined. Remove from the heat and leave to cool (you want this to be only slightly warm when you add to the aquafaba).
Place the aquafaba into your Kitchen Aid or similar mixer with a whisk attachment. Whisk on high speed until soft white peaks form. Add in 150g of sugar, 1tbsp at a time. It is really important that this is done slowly so that the soft peaks don’t sink.
Sieve all of your dry ingredients together in a large bowl including the remainder of the coconut sugar.
Once you have added all of the sugar to your aquafaba pour the chocolate and coconut oil mix in and fold in gently until combined. Then pour into your dry ingredients and gently fold in being careful not to knock too much of the air out of the aquafaba! Next the fun bit. With a fork drizzle the peanut butter onto the top of the brownie mix, swirling it in.
Line a 9 inch square cake tin with baking paper and pour in. Place in the oven for 28 minutes. The brownies will rise and will still be soft in the middle when you take them out. They will set you just have to give them time to cool down even though all you will want to do is pour the tray in your mouth!
