As kid (or adult…) who remembers licking out the mixing bowl after making cookies and cupcakes? We all know it tastes better than the actual baked result so we threw together a Norty vegan cookie dough ball recipe for you to enjoy and indulge your childhood desires.

Cooking time: 15 minutes
Difficulty rating: 2/5

Ingredients:

125g of Oats
70g of Coconut Oil
80g of Maple syrup
45g of Norty Salted Caramel Cashew Nut Butter
3g of Salt
3g of Vanilla Paste
20g of Cacao Nibs

Method:

Pop your oats into a blender and blitz momentarily so that they become slightly finer and ground down.
Next add in your maple syrup, coconut oil, cashew nut butter, salt and vanilla paste and blend again in your food processor until the mixture begins to bind together and resemble a classic cookie dough texture.
At this point remove your dough from the blender and place into a medium sized mixing bowl.
Scatter your cacao nibs through the dough, and using a spoon (or your hands if you don’t mind getting mucky!) mix all the ingredients together until the cacao nibs are evenly spread through the batter.
Now you have your dough, separate your mix into 16 balls of 30g and enjoy to your heart’s content!

These cookie dough balls are absolutely amazing as snacks on the go, or why not try topping your ice cream or yogurt with them and enjoy their indulgent gooey goodness as an easy breakfast or dessert?
